Copycat Chuy's Boom Boom Sauce

 

I'm from Texas, so yeah, I love Chuy's, and their Boom Boom sauce is the main reason. It's a vegetarian queso sauce that you can eat over chicken enchiladas or serve with tortilla chips. I've tried tons of recipes, and came up with this perfect replica.

For the perfect meltiness, get the yellow American cheese from your local deli counter. You can always use the pre-wrapped stuff from the cheese section of the grocery store, though, or even mix the two.

You'll need:

  • 12 oz canned green chiles
  • 1/2 bunch cilantro
  • 1 whole green onion, bulb removed
  • 1 to 2 serrano peppers
  • 1 tomatillo, skin removed
  • juice of 1 lime
  • 10 oz deli-sliced yellow American cheese

Put all ingredients except cheese in a blender and puree well.

Add puree into a medium stockpot over medium-high heat and bring to a boil. Lower heat to low and simmer until thickened and fragrant, 8 to 10 minutes.

Add cheese a few slices at a time, stirring every minute or so, until all the cheese is melted. (Don't overstir, and make sure the heat is low.)
