Shrimp Broccolini Pasta


This is really, really good. I did this in 15 minutes start to finish - just prep the ingredients in advance and everything will be ready at the same time!

You'll need:

  • 2 c veggie rotini (or any short pasta)
  • 1 lb XL shrimp
  • 2 bunches broccolini
  • 6 cloves garlic
  • 6 anchovies
  • 6 Tbs olive oil
  • 2 tsp red pepper flakes

Put a medium saucepan with about 4 inches of water over high heat to bring to a boil.

While that's coming to a boil, peel and clean the shrimp (if you bought unpeeled) and set aside. Trim the bottom inch or so from the broccolini and rinse well. Slice the garlic.

Bring about an inch of water to a boil in a large pan. Add the broccolini and boil 1 minute, then remove from the water and set aside. Repeat for all the broccolini. Pour out the water and return the pan to the stove.

Add the rotini to the boiling water and set for 9 minutes (or whatever the box says).

Heat 3 Tbs olive oil in the pan where you blanched the broccolini. Add half the sliced garlic and the broccolini, and season with salt and pepper. Cook, stirring occasionally, until soft, about 3 minutes. Dump the contents into a large bowl and set aside.

Add 2 Tbs olive oil back to the same pan. Place the shrimp in the pan in a single layer and cook 2 minutes, then flip and cook an additional 2 minutes. (I like to cover the pan after I flip them so they steam.) Pour the shrimp into the same bowl with the broccolini and return the pan to the stove.

Heat 1 Tbs olive oil in the same pan. Add the remaining garlic and the anchovies. Stir constantly, pressing on the anchovies, until they are melted into a paste, then add the red pepper flakes and stir well. Pour this mixture into the broccolini and shrimp and stir.

The pasta should be done! Use a slotted spoon to add the pasta to the bowl with the other ingredients, then stir using a large spoon or tongs until well combined.
