Shortcut Tres Leches Cake (Dos Leches)


This recipe simplifies tres leches cake for a crowd pleasing dessert. One time, I made this for an old boss who notoriously hated coconut. He ate three pieces before he overheard me tell someone the recipe. I am very proud of this. And yes, technically this cake only contains dos leches.

You'll need:
  • 1 pkg white cake mix
  • 1 c water
  • 1/3 c oil
  • 2 eggs
  • 1 can (14 oz) sweetened condensed milk
  • 1 can (15 oz) Coco Lopez cream of coconut
  • 1 container (8 oz) Cool Whip
Preheat oven to 350. Stir together cake mix, water, oil, and eggs until well-blended, then pour into a 13x9 pan greased with cooking spray. Bake about 25 minutes until a knife inserted comes out clean.

While the cake is baking, mix condensed milk and cream of coconut in a large measuring cup, stirring until smooth.

Using a drinking straw or the handle of a wooden spoon, poke holes throughout the cake about an inch apart. This will let the cake absorb all of the milk mixture. Spread milk mixture evenly all over cake slowly and allow time for it to soak in holes.

Cool cake completely. Frost cake with whipped cream, then refrigerate at least 3 or 4 hrs – overnight is fine.
