Harissa Grilled Salmon

Grilling is my new favorite thing to do with salmon. I cook it skin side down the entire time, and you end up with crisp, flavorful skin and perfectly cooked salmon.

You'll need:

  • 1/3 c olive oil
  • 1/4 c harissa paste
  • 1 tsp minced garlic
  • 2 lb salmon fillets
  • Salt, to taste

Whisk together the oil, harissa, and garlic. Set aside.

Preheat grill on low. Brush olive oil onto the salmon skin, and salt both sides of the salmon.

Place salmon, skin side down, over the flame on the grill. Brush with the harissa marinade and repeat every 5 minutes or so.

Let grill, covered, without flipping about 20 minutes. Remove from the grill and let sit 5 minutes. Serve with simple roast broccoli, if desired.
