Bistec a lo Pobre (Poor Man's Steak Dinner)

Mojo-marinated thin steaks that sear to perfection in minutes. Home-cut, salt-soaked, twice-cooked French fries. Fried eggs with steamed whites. This dish requires 3 main components, but each one will be done perfectly. It takes some pre-planning but comes together fast, and once you try it, you'll absolutely add this to your meal rotation.

You'll need:

  • 1 1/2 lb (about 6) thin milanesa steaks (1/4 inch thick)
  • 6 cloves garlic, minced
  • juice of 2 oranges
  • juice of 2 small limes
  • 6 eggs
  • 2 lb potatoes, sliced into French fries
  • 3 Tbs olive oil divided
  • Vegetable oil, for deep frying
  • Salt and pepper, to taste

Get It Ready: Stir together the garlic, orange juice, and lime juice with about 1 tsp salt. Place the steaks into a shallow container and pour the marinade over them, making sure the steaks are coated. Refrigerate at least overnight, up to 48 hours.

Slice the potatoes into the desired shape, and add to a tupperware container with enough water to cover them. When all the potatoes are sliced, stir in about 2 tsp salt. Refrigerate at least one hour, up to 24 hours.

Dinner Time! Drain the potatoes and dry with paper towels. Heat about 2 inches of oil to 300 F. Fry the potatoes in batches until tender, about 5 minutes, and remove to a paper towel-lined plate. 

Raise the oil temperature to 400 F. Fry the potatoes in batches again, about 3 minutes, until golden brown. Remove to a paper-towel lined plate to drain, and immediately toss with salt.

Heat 2 Tbs olive oil in a large skillet over medium-high. As soon as it swirls easily, add the steaks and fry about 5 minutes. Flip and fry about 3 more minutes, then continue to flip and cook until it's seared to your liking. Remove to a large plate.

In the same pan, add another Tbs olive oil over low heat. Gently drop in one egg, and immediately cover the skillet and remove it from heat for about 30 seconds. Return the pan to the heat, and add 1 Tbs water into the skillet away from the egg, then cover it again. This will steam the whites but leave the yolk. Cook over low heat about 2 minutes, then check for doneness. Grind some salt and pepper over them as desired. Repeat with the remaining eggs.

Put a serving of fries on a plate and place a piece of steak over them. Top with a fried egg.
