Coconut Lime Cod Stew



The spices and aromatics in this soup give it a warm, complex flavor.  I adapted this from Bon Appetit magazine, with a number of customizations to use some more mainstream ingredients.

You'll need:

  • 24 oz cod
  • 3 Tbs ghee or butter
  • 1 small red onion, halved and very thinly sliced
  • 2 Tbs garlic
  • 1 Tbs ginger paste
  • 1 tsp turmeric
  • 1 tsp coriander
  • 1 tsp cardamom
  • 1 tsp salt
  • 2 large sweet potatoes, diced into 1 inch cubes
  • 2 - 13.5 oz cans coconut milk
  • 3/4 c water
  • 2 limes, halved
  • 1 jalapeno, thinly sliced
  • Cilantro, to serve

Rinse the cod and salt lightly on all sides. Set aside.

Melt the butter in a pot on medium. Add the onion, garlic, and ginger, and saute until the onion is clear, about 5 minutes. Add the turmeric, coriander, and cardamom and stir until fragrant, about a minute. Add the sweet potatoes and salt, stir well, then add the coconut milk and water. 

Bring to a boil over medium heat, and let simmer about 10 minutes until sweet potatoes are fork tender.

Drain the cod. Using tongs, nest the cod in the broth so that it's covered, and simmer another 10 minutes until cod flakes easily.

Squeeze lime juice into the soup and stir. Add salt to taste. 

Serve topped with sliced jalapeno and cilantro.
