Keller House Oven-Roasted Pork Loin

This recipe takes three ingredients, including the pork!

Some tips:

  • Use pork loin roast - not tenderloin, not picnic roast - because it is a relatively thin cut which cooks quicker than thicker ones, but it still has a good amount of fat that renders down as you roast it. So, don't trim the fat!
  • I smash and peel the garlic to release more of the flavor, which infuses the roasting juices as it cooks - but you could leave them unpeeled and still get some good flavor out of it.
  • Start with the fattier side down before flipping halfway through - this makes sure both sides get some roasting juices on them, and keeps the spice mix from drying out too much, since we aren't adding any other liquid.
  • Use a meat thermometer to cook it to 170 degrees, so you don't overcook it!

You'll need:

Preheat the oven to 375 F, and pour a little olive oil (about a tablespoon) into an 8x8 inch pan (or spray with cooking spray).

Smash and peel the garlic, if desired, and put it into the bottom of the prepared pan.

Pour about half the seasoning onto the pork roast and use your hands to rub it into the top and sides. Flip the roast, and do the same on the other side.

Put the pork roast fat side down in the prepared pan. Cook uncovered 45 minutes, then flip. Cook another 45 to 60 minutes, until it reaches an internal temperature of 170 F.
