Andouille Soup with Mixed Greens

Every ingredient in this soup adds a unique flavor, and you end up with a spicy finished product. I don't even add salt and pepper at the end.

You'll need:

  • 1 medium onion, chopped
  • 4 garlic cloves, chopped
  • 4 bay leaves
  • 1 tsp dried thyme
  • 1 lb andouille sausage, sliced
  • 6 c chicken stock
  • 28 oz can diced tomatoes
  • 4 c mixed greens (kale, turnip, mustard, etc.)

Put a large pot on the stove over medium high heat and add about 2 Tbs olive oil. When it's hot, toss in the onion, garlic, bay leaves, and thyme, and sauté, stirring occasionally, until the onions are soft, about 5 minutes. Add the andouille and sauté, stirring occasionally, about 5 more minutes - the onions will get shiny as the andouille fat renders.

Dump in the chicken stock and tomatoes and bring to a boil. Simmer, covered, about 10 minutes. Remove the bay leaves. (I recommend remembering to do this before you add the greens, or it will be really difficult to find them!)

Rinse the greens well, then add them to the soup, a cup at a time, until soft. Stir, and let simmer another 10 minutes.

Add salt and pepper to taste. Serve alone or over rice.
