15-Minute Cuban Black Bean Stew

You could soak beans overnight, then boil for hours before seasoning and serving... or you could doctor up some canned beans in less time than it takes to make the rice. Don't skip the vinegar - it adds another layer of flavor - and if you're feeling adventurous, use one of the Keller House Seasoning infused vinegars.

You'll need:

  • 2 Tbs olive oil
  • 1/2 c chopped onion
  • 1/2 c chopped green bell pepper
  • 1 Tbs minced garlic
  • 1 Tbs beef bouillon (or 3 cubes)
  • 2 - 15 oz cans black beans, undrained
  • 1/2 c water
  • 1 tsp distilled vinegar
  • Salt, to taste

Put the olive oil in a medium saucepan over medium-high heat. When warm, add the onion and bell pepper and saute until soft - about 5 minutes. Stir in the garlic and bouillon, then pour in the black beans and water. Bring to a boil, then lower heat and simmer 10 minutes. Season to taste with salt (I add about 1/2 teaspoon) and stir in the vinegar. Garnish with sliced jalapenos if desired. Serve over steamed white rice.
