Oven-Baked Sweet Potato Fries

You'll need:

  • 2 large sweet potatoes
  • 1/4 c olive oil
  • 2 Tbs Keller House Seasoning (or seasoned salt)
  • 1/2 tsp kosher salt
  • 1/2 tsp ground black pepper

Peel the sweet potatoes and slice into uniform slices - about 2 to 3 inches long and a half inch wide. Put in a large bowl of water and let soak at least half an hour (up to 24 hours, if you're really good at planning).

Preheat oven to 400 and line a baking sheet with parchment paper. (This will make them more crisp than using aluminum foil.)

Drain sweet potatoes as much as possible, and return them to the bowl. Add the olive oil and seasonings and toss with your hands until evenly distributed. Pour the potatoes onto the baking sheet.

Bake 40 to 50 minutes, flipping and checking every 15 minutes or so, to desired level of crispiness.
