Secret Recipe Bolognese Sauce

You'll need:

  • 3 lb ground beef
  • 1 tsp minced garlic
  • 2 Tbs beef bouillon powder
  • 1 tsp black pepper
  • 1/2 tsp red pepper flakes
  • 1/2 c dry red wine (Cabernet Sauvignon is good)
  • 2 - 24 oz cans pasta sauce
  • 4 c water
  • 1 small onion, grated or finely minced

Brown the ground beef and drain well. (Click here for a detailed tutorial.) Return the pan, with the ground beef, to the stove over medium-high heat. Stir in the garlic, bouillon, black pepper, and red pepper flakes, until the spices are distributed.

Pour in the wine and stir. This is what gives my recipe its trademark flavor - many recipes use white wine or none at all. Let simmer until the wine is evaporated, just a few minutes. Pour in the pasta sauce and water, and stir in the grated onion.

Bring to a boil, then cover and simmer on low at least 2 hours, up to 4 hours. After about an hour and a half, the sauce will turn a smoky color and start to thicken.

When done, remove from heat. Carefully taste and add salt if you'd like. Serve on pasta, or use to make lasagna.
