Quick and Easy Pineapple-Jalapeno Chutney

This is a quick and easy recipe for thick pineapple jalapeno jam, a combination that is fresh-tasting with a bite.

You'll need:

  • 2 - 8 oz cans pineapple tidbits in pineapple juice
  • 1/2 c sugar
  • juice of 1/2 large lemon
  • 1 jalapeno, diced

Empty the cans of pineapple, with juice, into a small saucepan and add the sugar and lemon juice. Bring to a boil, then simmer, stirring occasionally, until thick and syrupy. You'll know when it gets there, but keep an eye on it so you don't burn it. Mine took about 20 minutes.

Remove from heat and stir in the diced fresh jalapeno. Store in the refrigerator.

Serve with crackers or over bruschetta.
