Crunchy Lemon Squares

 This recipe has everything: lemon, oats, pecans, coconut. It turns into a crisp flavorful crust around a lemon custard filling.

You'll need:

  • 1 c quick oats
  • 1 c flour
  • 1/2 c sweetened coconut flakes
  • 1/2 c chopped pecans
  • 1/2 c brown sugar
  • 1 tsp baking powder
  • 1/2 c melted unsalted butter
  • 1 can (14 oz) condensed milk)
  • 1/2 c lemon juice
  • 1 Tbs lemon zest
Preheat oven to 350. Combine oats, flout, coconuts, pecans, sugar, baking powder, and butter, and stir to form coarse mixture. Set aside.

In another bowl, combine condensed milk, lemon juice, and lemon zest. 

Put half of the crumb mixture on the bottom of a 9x9 inch pan. Spread milk mixture on top and sprinkle with remaining crumbs. Bake 25 to 30 mins or until lightly browned. Cool completely before cutting.
