Sansa Stark's Lemon Cakes


I couldn't help but notice, during Game of Thrones' last season, that nobody had yet perfect Sansa's favorite lemon cakes from her not-so-lovely time in King's Landing. Here's my take on a very lemony, sweet but not too sweet pastry, perfect for tea time or dessert.

You'll need:
  • 1 c flour
  • 1 Tbs baking powder
  • 1/4 tsp salt
  • 1 1/2 c sugar
  • 2 eggs
  • 1 stick butter, softened
  • 2 Tbs lemon zest (from 2 large lemons)
  • 1 tsp vanilla extract
  • 1 tsp lemon extract
  • 1/2 c milk
In a medium sized bowl, whisk together the flour, baking powder, and salt, and set aside.

In a stand mixer, mix together the butter and sugar until fluffy. Add the eggs, one at a time, mixing after each, and then blend in the lemon zest.  Mix in the extracts.

Alternate adding the milk and dry ingredients - starting and ending with the milk.

Pour into a mini bundt pan so each mold is about half full. Bake at 350 for 12 minutes. Let cool 10 minutes in pan, then turn out onto a plate to finish cooling.

Mix it up:
  • Use a mini donut pan or a donut maker for an extra cute end product.
  • You can also make mini muffins - just bake them about 9 minutes and keep an eye on them so they don't burn.
