Cuban Dalgona Coffee



Dalgona coffee is a simple whipped drink named for the honeycomb toffee it resembles. Normally you make it with equal parts instant coffee, sugar, and hot water, whipped into a foam and served over milk... but instant coffee kind of freaks me out. I know, I know. So I made my own version using Cuban espresso.

Make espresso - here's a quick link to my tutorial using a stovetop cafetera - including the sugar. Put it all into a glass container that is way bigger than the amount of coffee you have, like a large mixing bowl or measuring cup.

Take a hand mixer and start whipping on high. It will froth up - a lot - and develop soft peaks (loosely holding its form on its own) with a very light color.

When it's done, set that aside and put some milk in the bottom of the glass your using - whatever milk you want.

Pipe or spoon the whipped coffee over it so it's in layers. (You should have enough for several servings if you used a 6 cup espresso maker.) 

Mix together to drink, and add additional sugar if you'd like.
